May 2025 part 2
May seems like it’s gone on forever. I’m still not overly enthused about cooking or grocery shopping but still like to eat mostly at home. And I like to choose my groceries. I am a problem for me sometimes.
I feel like I’ve cooked a lot even while using the freezer quite a bit. And using leftovers while creating new leftovers.
I usually shop about every two weeks but the day came and I couldn’t go. I decided to replan and push out another week. And warned husband that meals might be weird.
A delicious kale salad but used bacon because I wouldn’t shop. Also anchovy paste since I didn’t have a tin of anchovies. Eggplant slices on the side. From the freezer.
Lemon orzo shrimp but with different pasta because I am irrational about orzo. Don’t love it. Doesn’t make sense.

Wonton soup to use up frozen chicken broth, bok choy, green onions, ginger, chili sauce and frozen wontons. Always good. No recipe.
Breakfast risotto which resulted in leftover risotto which resulted in arancini for a meal with more for the freezer.
Frozen meals that did very well in the freezer: turkey stew, stuffed cabbage, peach crisp with freezer peaches.
I found some Caesar dressing and romaine in the fridge and some bread cubes in the freezer along with salmon - salmon Caesar salad. House made croutons.
Asparagus tart so asparagus did not get bad. Change the cheese, I had fontina to use up.
I finally did go shopping but I’m trying to find the line between hoarding and being slightly stocked. I do not want to waste food.
Sloppy joes but I used a skillet not the oven. Quiche using one of my freezer crusts.
Still walking and surprised this guy when I left a little early one morning. We were both surprised when I opened the garage.
I joined Sebastian the dog and his person a couple times at the park while walking and Sebastian showed me there are turtles in the pond.
Normal days with knitting, Friend’s meetings, some sewing, some reading, even a bit of cleaning.
A little house repair, our garage door spring broke and our garage door was very old. And scary. Overhead Doors did a great job!
So I guess it’s summer now! I have grilled a couple times and burgers on the grill are wonderful. Also okra on the grill.
And flowers at the park.

I love your posts because it connects us again...But they do make me hungry and I try not to eat before 11 am - have done intermittent fasting for years! I wish you would just send me your leftovers!!!
